Funji

(serves two)

Ingredients
2 cups Boiled Chicken Stock
1/2 cup Okra
1 cup Cornmeal
1/4 cup Cold Water

Method

  1. Bring chicken stock and okra to a boil.
  2. Cook until okra falls to the bottom of the pot.
  3. Mix cornmeal with cold water until pourable.
  4. Slowly pour chicken stock and okra into cornmeal mixture stirring continuously for 5 minutes over low heat.
  5. Pour mixture into sheet pan and let cool.
  6. Cut into desired shapes.
  7. Sauté or grill to reheat.
